Pomegranate, Vodka & Violet Granita
INGREDIENTS
300g caster sugar
1L (4 cups) cranberry and pomegranate juice
1 cup (250ml) vodka
Seeds of 1 pomegranate
Edible violets, to serve
INSTRUCTIONS
1. Dissolve sugar in water in a pan over medium heat, stirring. Simmer for 10 minutes, then pour into a bowl.
2. Cool slightly, then stir in the juice. Transfer to a 2L (8 cup) container. Freeze overnight until frozen. Scrape with a fork into crystals.
3.Divide vodka among 8 serving glasses and top with granita. Scatter with pomegranate seeds and violets.

Cucumber Cooler Cocktails
INGREDIENTS
1 1/2 oz gin (1 1/2 oz equals 3 Tbsp)
4-6 slices cucumber
1/4 medium lime (sliced)
4 oz tonic water
6 mint leaves
1 Tbsp sugar (optional)
INSTRUCTIONS
1. Add the mint, lime, gin, and sugar (if using) to shaker and muddle.
2. Add cucumber slices to shaker and shake vigorously.
Pour mixture over glass filled with ice and top with tonic water.
3. Stir, let set for a few minutes for the flavours to enhance and enjoy.

Frozen Pineapple Margaritas
INGREDIENTS
2 cups (490 grams) frozen pineapple chunks
1/4 cup (60 ml) fresh lime juice
1/4 cup (60 ml) tequila
2 tablespoons (30 ml) triple sec
1 cup ice
Mint leaves for garnishing
INSTRUCTIONS
1. Add everything to a blender or food processor and blend until smooth and frothy.
2. Fill glass to the top then serve with fresh mint and garnish with a lemon wedge and some pineapple.
Vodka Watermelon Cocktails
INGREDIENTS
1/4 cup chilled watermelon juice
1/4 cup vodka
2 tablespoons fresh lime juice about 1/2 lime
1 teaspoon honey or maple syrup (optional)
fresh mint, lime wedges and small watermelon wedges, optional for garnish
INSTRUCTIONS
1. Add everything to a blender or food processor and blend until smooth and frothy.
2. Fill glass to the top with ice then serve with fresh mint and garnish with a lime wedge or watermelon wedge.
3. Like it fizzy? Top it off with club soda or even Sprite.

Sunset at Uluru

The Great Ocean Road
This is a 482km road, which winds between the Victorian cities of Torquay and Allansford, following Australia’s south-eastern coast. The entire drive takes about nine-and-a-half hours, though it’s recommended to take three days to do the trip in full. As well as the stunning coastal views, the road is also known for the Twelve Apostles, a collection of limestone stacks off the shore of Port Campbell National Park. Think of all the wonderful conversations that can be had along the way and all of the memories made!

Kalbarri Coast Drive
Forget about going overseas…West Australia’s Kalbarri region is home to some of the state’s most spectacular sights. Situated where the Murchison River meets the Indian Ocean, Kalbarri National Park also has a short coastal drive, which is well worth doing for the view of the park’s stunning pink saltwater lake, the Hutt Lagoon. Those wishing to extend their road trip can carry on and do the Indian Ocean Drive, which continues down the WA coastline.
